Let there Be LOVE!

Let there be love is the theme of the waterford crystal ball that drops every year in times square.  It reflects the leadership and creativity that the United States displays with its artistic and creative heart. Read more about the New Years Eve Ball.

I’m now reflecting on the changes I’ve seen after 60 ears of life on Earth.  WOW.  The introduction of television (3 channels when I was 5), computers, cell phones, skype, and the internet!  Integrating all that new information is a steep learning curve.  Never before has the world been so connected.  The world sits upon the precipice of a fantastic shift that will change the course of life for everyone.

This this the first of a series of messages that will share the best of what I am learning about how to enjoy of these rapidly changing times.  Things like new scientific breakthroughs or therapies for afflictions.  The name comes from my “Boomer” generation, but the blog I’m creating is for everyone. We will share what we know and what we are learning, using the amazing technology that connects us all to make the best choices for our future and the generations that will follow us.  We want to hear from you about the exciting things you know and want to share.  And, let us know what you want to learn.

Let’s talk about the best we know about Health, Wealth, Technology, Science, Food, and of course, my favorite – Style.

There is a technology to help us gracefully through these times. It is ancient and yet aligned with the most advanced scientific discoveries.  Yoga and Meditation have been the foundation of my life since I was 14.  I have continued to study through many traditions, and will throughout my life.  Anusara Yoga (www.anusara.com) is the hatha yoga practice that has helped me achieve new freedom in my body and greater self esteem, as I was able to overcome obstacles that I thought were impossible.  Teaching has helped me open my voice and reduce my fear of speaking out.  The community of Anusara teachers and friends is loving and supportive.

Primordial Sound Meditation is the meditation practice I have followed since I was 14 (then named Transcendental Meditation).  I love teaching both yoga and meditation.

It’s cold in Colorado, and after all those rich holiday foods it’s good to spend a couple of months eating simply and enjoying a winter cleanse.  I’m easing into it this year, starting out gradually with soups, and a favorite – avocado with a sprinkle of fine olive oil and Himalayan Pink Salt.

Moroccan Lentil Soup

Adapted from The Art of the Slow Cooker by Andrew Schloss
Serves 6

  • 2 tablespoons extra-virgin olive oil
  • 2 large onions, chopped
  • 3 large cloves garlic, minced
  • 2 heaped teaspoons ground coriander
  • 2 heaped teaspoons ground cumin
  • 1 teaspoon turmeric
  • 3/4 teaspoons paprika
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon allspice (optional)
  • 1 1/2 to 2 teaspoons kosher salt (to begin with), then to taste
  • 1/2 teaspoon freshly ground black pepper
  • 7 cups vegetable broth
  • 1 24-ounce can crushed tomatoes
  • 2 cups dried red lentils, rinsed and picked over
  • a pinch of crushed red pepper flakes
  • juice of 1 lemon
  • a small splash of red wine vinegar (about 1/2 tablespoon)
  • 3 tablespoons chopped flat-leaf parsley leaves
  • 1 tablespoon chopped fresh cilantro

Heat the olive oil in a large saucepan or dutch oven over medium-high heat.  Add the onions and cook until tender, about 6 minutes.  Add the garlic, coriander, cumin, turmeric, paprika, cinnamon, and allspice.  Cook for another minute or two, stirring to coat the onions.  Add the broth, tomatoes and salt, and bring to a boil.  Pour into a slow cooker, and stir in the lentils.  Cook for 4 to 5 hours on high, or 6-8 hours on low, or until the lentils are tender.

Stir in the lemon juice, a small splash of red wine vinegar, red pepper flakes, cilantro, and parsley.  Season to taste again with kosher salt.   Cover and cook for an additional 10 minutes.

These spices knock out infection and clear the tissues.
Garlic, coriander, cumin, tumeric, paprika, cinnamon.
